Flourless Protein Pancakes

You know when you’ve finished a hard workout and you just want a really filling breakfast that you know is going to hit the spot? Protein pancakes are the answer!

These were the first protein pancakes I’d really perfected, with the help of one of my CrossFit friends I found the perfect balance of ingredients. Made with only three ingredients, banana, egg and whey protein, they’re super easy and perfect for if you’re avoiding flour. Though you can make great pancakes with oat flour or coconut flour

Anyway, they’re so easy, in fact, you might be tempted to have them for breakfast every day!

{A BIT OF PREPARATION} Wow, NYE already… I can’t believe where this year has gone. I’m sure as I get older time goes faster, but someone pointed out to me the other day that a year becomes less and less significant the older you get, because it becomes a smaller proportion of your life. One of my goals for 2016 is to be more organised, and prepare more. Whether that’s making breakfast the night before (like I did with these delicious strawberry protein pancakes), or planning my workouts, tasks and objectives at the start of each quarter, month and week. Around half of us make New Year’s Resolutions, but the numbers that stick to them are pretty dismal. But I’m not going to be a statistic this year – after all, a goal without a plan is just a wish! Make sure you use enough egg and whey to balance out your banana, or you’ll end up with a mixture that’s impossible to flip. I use a standard medium-sized banana, about 6-7 inches. I use coconut oil to fry them, not because it’s the new big health food, but because it’s bloody slippery!

Serves 1
A great option for those trying to keep away from flour or flour substitutes. This protein pancake batter only uses three ingredients and makes for an attractive American-style stack!

Ingredients
  1. 1 banana
  2. 1 scoop (20g) vanilla whey protein (or substitute)
  3. Either 2 whole eggs
  4. Or 1 whole and 2 egg whites
  5. Coconut oil, for frying
Instructions
  1. Heat some coconut oil in a small pan over a moderate heat.
  2. Mash the banana with a fork.
  3. Crack in the eggs.
  4. Stir in the protein powder until smooth (or you can skip step one by blitzing it all in a blender).
  5. Pour in 1/3 - 1/4 of the batter and fry until small bubbles appear on the surface.
  6. Flip with a spatula and cook for 40-60 seconds on the other side.
  7. Continue with remaining batter.
  8. Serve stacked with toppings of your choice!
Notes
  1. These can be cooked up the night before and microwaved for 1-2 mins.

Pancake Topping Ideas

If you want some topping inspiration, why not try one of the following combinations?

  • Frozen berries and peanut butter
  • Choc shot, dried fruit and chopped nuts
  • Streaky bacon, pecans and maple syrup
  • Nutella and more banana
  • Honey, granola and chopped fruit
  • Mango, coconut flakes and greek yoghurt
  • Lemon and a sprinkling of sugar
  • Lemon curd and broken up meringue nests or quark
  • Blueberries and cream
  • Salted caramel sauce and broken pretzels
