
You know when you’ve finished a hard workout and you just want a really filling breakfast that you know is going to hit the spot? Protein pancakes are the answer!
These were the first protein pancakes I’d really perfected, with the help of one of my CrossFit friends I found the perfect balance of ingredients. Made with only three ingredients, banana, egg and whey protein, they’re super easy and perfect for if you’re avoiding flour. Though you can make great pancakes with oat flour or coconut flour…
Anyway, they’re so easy, in fact, you might be tempted to have them for breakfast every day!
Flourless Protein Pancakes Recipe

Make sure you use enough egg and whey to balance out your banana, or you’ll end up with a mixture that’s impossible to flip. I use a standard medium-sized banana, about 6-7 inches. I use coconut oil to fry them, not because it’s the new big health food, but because it’s bloody slippery!


- 1 banana
- 1 scoop (20g) vanilla whey protein (or substitute)
- Either 2 whole eggs
- Or 1 whole and 2 egg whites
- Coconut oil, for frying
- Heat some coconut oil in a small pan over a moderate heat.
- Mash the banana with a fork.
- Crack in the eggs.
- Stir in the protein powder until smooth (or you can skip step one by blitzing it all in a blender).
- Pour in 1/3 - 1/4 of the batter and fry until small bubbles appear on the surface.
- Flip with a spatula and cook for 40-60 seconds on the other side.
- Continue with remaining batter.
- Serve stacked with toppings of your choice!
- These can be cooked up the night before and microwaved for 1-2 mins.

- Frozen berries and peanut butter
- Choc shot, dried fruit and chopped nuts
- Streaky bacon, pecans and maple syrup
- Nutella and more banana
- Honey, granola and chopped fruit
- Mango, coconut flakes and greek yoghurt
- Lemon and a sprinkling of sugar
- Lemon curd and broken up meringue nests or quark
- Blueberries and cream
- Salted caramel sauce and broken pretzels
